Curry Chicken Bowl Thai Recipe


  • 2 Cups cooked rice
  • 2 Avocados sliced
  • 1 Cup chickpeas
  • 1 Tbsp curry powder
  • 3 Lettuce leaves chopped
  • 1 Tsp salt
  • 1 Lb. chicken breasts.
  • 1 Garlic clove minced
  • 2 Tbsps vegetable oil
  • 3 Tbsps milk


  • Place the chicken in a pot over medium heat and cover with water.
  • Cook for 10-15 minutes and transfer the chicken to a bowl.
  • Once cooled down, shred with the help of forks.
  • Heat a large saucepan over medium heat with the vegetable oil.
  • Cook the chicken with garlic and salt.
  • Set the heat to low, and add the curry and milk. Simmer for 5-10 minutes.
  • Serve in a bowl with rice, chickpeas, lettuce, and avocado.
  • Enjoy.


Add some hot sauce to amp up the spices.
