It’s a hot summer day and my children have invited nearly every kid in the neighborhood to come over and jump on our trampoline and watch the sunset and stars rise. It’s such a beautiful evening that I ponder starting a little fire and letting the kids toast some marshmallows and make some hot, gooey, s’mores. Turns out my darling spouse forgot to run to the grocery store, so I have to get a little creative. And then…. this S’mores Cheesecake Recipe was born! It is simple, affordable, and takes very few ingredients!
Ingredients for the S’mores Cheesecake Recipe
1 ½ cup Marshmallows
¼ cup of chocolate syrup
1 stick of salted butter
2 boxes of S’mores Poptarts
Philadelphia Ready to eat Cheesecake filling
1/3 cup of milk
2 teaspoons of vanilla extract
Chef’s Side Note: You can grab all of these ingredients for less than $20 at your local grocery store!
How to Make the S’mores Cheesecake Recipe
Place Poptarts in a food processor or blender and chop down to a nice crumb.
Melt butter and mix with Poptart crumbs and press into the bottom of springform pan to make your crust.
In mixer, blend your container of Cheesecake filling, milk, and vanilla extract until soft and fluffy.
Layer and spread cheesecake filling into springform pan over the crust.
Layer marshmallows over the top of cheesecake filling.
Place into the oven for 25 minutes at 335 degrees or until marshmallows are browned and toasted.
Place in refrigerator for 25 mins.
Slice and serve.
**Drizzle chocolate syrup over for some cool flare.
