Lemon Sugar Cookie with Buttercream Icing Recipe
In fact, lemon sugar cookies with buttercream icing are easy enough for you to whip up a batch with the kiddos in a breeze! You’ll probably be surprised to find that you already have most of the ingredients on hand! You’ll need butter, an egg, sugar, flour, vanilla, butter, lemon juice, baking powder, salt, and the zest from two lemons!
You’ll want to make sure you the lemon’s as it can be a bit dangerous for the kids.
Once you have that part complete, however, they can help with the rest! First, you’ll make your buttercream frosting and set it to the side! You’ll combine flour, baking powder and salt. Once combined, slowly add into butter-sugar mixture and fold until you reach a somewhat sticky consistency. If you feel it is too sticky, add more flour (a little bit goes a long way).
Now, it’s time to make your dough!
Using a hand mixer, you’ll combine the butter and sugar and mix until smooth. Next, you’ll add the egg and mix well and finally, you’ll add the vanilla, lemon juice, and half of lemon rind.
Once you’ve mixed all the ingredients together and made the dough, you’ll form 1 inch balls with it and place it onto the cookie sheet!

Lemon Sugar Cookies with Buttercream Icing Recipe
- Makes about 3 dozen
- 1 stick butter
- 1.5 cups sugar
- 1 large egg
- 0.5 tsp vanilla
- 2 cups all-purpose flour
- 0.5 tsp baking powder
- 0.5 tsp salt
- 2 tbps lemon juice
- Zest of two lemons
- Step 1 – Preheat oven to 350 degrees. Prepare a cookie sheet by either lining it with parchment paper or spraying non-stick spray. Set aside so that you can start your cookie dough!
- Step 2 – With a hand mixer, combine butter and sugar and mix until smooth. Add egg and mix well. Next, add vanilla, lemon juice, and half of lemon rind.
- Step 3 – In another bowl, combine flour, baking powder and salt. Once combined, slowly add into butter-sugar mixture and fold until you reach a somewhat sticky consistency. If you feel it is too sticky, add more flour (a little bit goes a long way).
- Step 4 – Roll your cookie dough into 1 inch balls and place on cookie sheet, giving enough space between each cookie. Bake for 12 to 14 minutes and once cool, top with buttercream icing. Sprinkle each with the remainder of your lemon rind and enjoy.
