This bruschetta chicken recipe is the perfect quick and easy weeknight meal solution!
Bruschetta Chicken Recipe
My recipe for bruschetta chicken is very simple. In a bowl, mix garlic powder, thyme, basil, salt, pepper and vinegar. Once you have it all mixed up, rub the chicken with the spiced vinegar.
In a skillet, heat your olive oil over medium-high heat. This takes about 10 minutes to achieve. Once you’ve made sure that your oil is well heated, add the chicken and cook for 10 minutes or until golden brown. Overcooking the chicken happens when the heat is too high. The chicken can become tough and dry on the outside, while the inside isn’t fully cooked. In order to master this bruschetta chicken recipe, be sure not to allow your oil to become too hot, in order to avoid this.
Once your chicken is a nice golden brown, and you’ve removed it from the oil, you can serve it and top with tomatoes and cheese. Throw in some cooked potatoes and asparagus on the side, you’ve successfully whipped up a delicious meal in a very short amount of time! - 4 Chicken breasts
- 1 Tbsp garlic powder
- ? Cup grated mozzarella cheese
- 1 Tsp dried thyme
- 1 Tbsp dried basil
- 2 Tomatoes chopped
- 2 Tbsp apple vinegar
- Drizzle olive oil
- Salt and pepper to taste
- 2 Cooked potatoes
- 5 Asparagus
- Mix in a bowl garlic powder, thyme, basil, salt, pepper and vinegar.
- Rub the chicken with the spiced vinegar.
- Heat olive oil in a skillet over medium heat.
- Add the chicken and cook for 10 minutes or until golden brown.
- Serve and top with tomatoes and cheese.
- Side with cooked potatoes and asparagus.
