Thai food happens to be one of my favorites. It’s particularly satisfying around the time of the year when the weather is beginning to cool down and you could use a nice warm meal to fill your tummy. A curry chicken bowl is the perfect solution for nights like this. Interestingly enough, despite my love of Thai food, curry was never really high on my list. I tried it once several years ago and wasn’t exactly thrilled by the taste. After that experience, I vowed never to try it again.
Until I met my Husband, that is. When we would go out on dates to Thai restaurants, he would always opt to grab a curry of some sort. Despite the fact that he would convince me to try his curry chicken or another curry recipe from time to time… I still wasn’t impressed. Finally, one day he got to me to sample a curry chicken bowl he had ordered, and I was amazed! It actually tasted great! I wouldn’t have automatically classified it as my favorite or anything, but I didn’t despite it the way I had curry in the past.
Now that I had stumbled upon a curry chicken that I actually enjoyed, my next step was to create a curry chicken recipe that fit my needs perfectly. I played around with the ingredients a few times and… wah-lah! The curry chicken bowl was created!
It doesn’t matter if you cook Thai food often, or if you’ve never cooked it before in your life… follow my curry chicken bowl recipe and you’re sure to end up with a recipe you and your family will enjoy. I will note that this may be a little spicy for your younger children. My 7-year-old enjoyed it, but my 3-year-old opted for the good old PB&J sandwich on curry chicken bowl night.
